In Australia, we have been blessed to have the New Zealand classic ice cream, hokey pokey. A vanilla based icecream with small honeycomb toffee bits. Mm. It would pair so well with this cookie. This cookie makes me think of enjoying a hokey pokey ice-cream by the ocean in summer!
